Growing up in a family who valued all things creative—particularly the art of cooking—Chef Mirko discovered his fascination for food at a young age. Initially, the Puglia-born chef and restaurateur began cooking as a means of feeding himself and his brother as both parents worked to provide for the family. Quickly, Chef Mirko formed a passion for baking, and started whipping up simple creations.

At 25 years old, Chef Mirko found himself as Chef de Cuisine of Italian fine dining restaurant, Braci, in Singapore. There, he led the restaurant to its first Michelin star in 2017, awarded just nine months from opening. After helming the restaurant for five years, Chef Mirko heeded an inward call to go on a new adventure. In a bid to expand his creativity, he began exploring his own identity and the legacy he wanted to create. In time, he found the perfect partner in The Lo & Behold Group—and started to pursue his dream of working at the intersection of food and culture while nurturing the next generation of chefs.
