Savour authentic flavours of the Mediterranean as Chef Daniele Lippi of 2-Michelin Star Acquolina, Rome joins award-winning Chef Daniele Sperindio at L’Amo Bistrò del Mare in the newly opened METT Singapore for an exclusive four hands dining experience.

For 3 nights only, Chef Lippi showcases his signature creations, taking diners on a gastronomic journey along the Italian Mediterranean shores which has united different peoples, traditions, and cultures for centuries. Chef Sperindio further complements the menu with his signature take on classic Italian dishes, celebrating the richness of coastal Italian fare, brought to life with the finest seasonal ingredients. Together, the chefs unveil a specially-curated menu featuring highlights such as Risone with Borage and Sea Truffle, as well as Lacerto a Boccadasse – Whole Mackerel “alla Cacciatora” with Santa Margherita Prawn and Purple Artichoke Essence.

Set within the heart of Fort Canning, L’Amo Bistrò del Mare offers an elegant yet relaxed atmosphere that embodies the culture and charm of the Italian coast, promising a refined Italian-Mediterranean dining experience that is sure to impress.

About Acquolina

Chef Lippi, born in 1990, trained under the Troiani brothers, spending nine years at Convivio. Head Chef since 2015, he has honed his style with various forays into the top ranks of the international Michelin-starred scene, working with celebrated chefs such as Yannick Alléno of Pavillion Ledoyen***, Paris, Enrico Crippa of Piazza Duomo***, Alba, Grant Achat of Alinea Restaurant, Chicago, and again in Spain with Paolo Casagrande of Martin Bersategui’s Lasarte***. In 2019, Chef Lippi arrived at Acquolina Restaurant in Rome as Head Chef, retaining the restaurant’s previous Michelin star and earning a second star in 2022. Great names and cuisines have fused into a unique and refined style, rich but never overbearing, which works with meat and fish, sometimes in the same course, to weave the fabric of a Mediterranean on the table with accents and fusions of great intensity to the eye and palate.

About L’Amo Bistrò del Mare

Chef Sperindio is an award-winning Italian chef whose work explores Italian heritage through a contemporary, research-driven lens. Based in Singapore since 2012, he is the Chef-Owner of Art di Daniele Sperindio, awarded one Michelin star from 2021 to 2024, and named Best Italian Restaurant in the World 2024 by Gambero Rosso, alongside multiple international accolades. He is also a Krug Ambassade.

Now entering a new chapter at METT Hotel Singapore, Chef Sperindio expands on his role of restaurateur beyond his own ventures, stepping into the position of Director of Culinary & F&B. In this role, he guides the hotel’s gastronomic vision while preparing the next evolution of Art di Daniele Sperindio, set to launch in early 2026. His cuisine reflects an ongoing maturation — personal, cultural, and culinary — where tradition remains constant, but the narrative deepens with every iteration.
