About Trippa Milano
Born in 1985 in Veneto, Chef Diego Rossi has dedicated half of his life to the art of gastronomy. His culinary journey began after attending hospitality school, where he honed his skills in prestigious establishments across Northern Italy. Notable stops included the Hotel Bauer’s restaurant in Venice, St Hubertus at the Hotel Rosa Alpina, Locanda Margon in Trento, and Le Antiche Contrade in Cuneo, where he and his colleague Juri Chiotti earned a Michelin star. In 2015, Chef Diego opened Trippa Milano alongside Pietro Caroli.
Chef Diego’s culinary philosophy is deeply rooted in sustainability, emphasizing the use of seasonal fruits and vegetables, as well as a commitment to foraged foods. A pioneer in promoting environmental consciousness in the kitchen, Chef Diego has become a reference point for his agile dissemination of knowledge and innovative use of offal. His dedication and talent earned him a spot on The Best Chef Top 100 list in 2022.

Chef Daniele is the Chef/Owner & Managing Director of the I’WA Group which includes 2 concepts, Art di Daniele Sperindio and GEMMA.
Chef Daniele received his culinary training from some of the best chefs in the world, including Chef Grant Achatz of the renowned 3 Michelin-starred restaurant Alinea in Chicago and Chef Yoshihiro Narisawa of the 2 Michelin-starred restaurant Narisawa in Tokyo.
Chef Daniele’s other restaurant, Art di Daniele Sperindio (1 Michelin Star), has recently been awarded Gambero Rosso’s “Restaurant of the Year” in 2023.
