Established by restaurateur-chef Beppe De Vito, Amò is a smart-casual Italian eatery and bar named after amore, the Italian word for love, representing its designation as a social destination where loved ones gather over reimagined Italian classics inspired by tradition, seasonality and produce.

With most of ingredients made in house by hand, Amò pays undivided attention to exalting the most authentic and natural flavours through the use of the best and freshest produce. Featuring dishes such as Homemade Fettuccine with Jumbo Crab, San Marzano Tomato and Mascarpone, and Roasted Chilean Seabass with Red Chard and Amalfi Lemon Sauce, indulge in an extraordinary feast of authentic Italian cuisine inspired by timeless traditions and new techniques.

Head Chef, Amò

“You will face many setbacks in life, but never let yourself be defeated” is the philosophy Chef Gavin lives by. After a childhood of rebellion, Chef Gavin found his direction in life after signing up for culinary school. In cooking, he found excitement in experimenting with different flavours and ingredients and it was also a way to honour the memories of his grandmother who was an excellent cook and host.

After eight years cutting his teeth across the ilLido Group’s collection of Italian restaurants, Chef Gavin has found his home at Amò, where he has been working alongside Restaurateur-Chef Beppe De Vito since the restaurant’s opening in 2017. Over the last six years at Amò, he has collaborated with top chefs such as Michelin Japanese chef Kotaro Noda and counts Chef Nancy Silverton as one of the special guests he has had the privilege of serving. Today, he steadfastly leads Amò’s culinary team of 7 chefs towards the restaurant’s goal of bringing more people together through delicious and inspired Italian cuisine.
