Hailing from the charming town of Waasmunster, Chef Michiel De Bruyn of 1-Michelin Star Sense, Belgium joins Chef Yew Eng Tong of 1-Michelin star Alma by Juan Amador, Singapore to present an extraordinary menu of modern European fare in an unforgettable four-hands collaboration.

Chef Michiel’s culinary philosophy seeks to elevate classic French recipes and techniques with a contemporary twist, serving wholesome, recognisable flavours alongside his signature gutsy sauces in creations such as A5 Wagyu with Onion, Miso, Herb Dumplings, Spring Onion and Oxtail. Meanwhile, Chef Eng Tong brings his unique touch to European gastronomy, weaving Asian influences into meticulously crafted dishes and skilfully infusing his penchant for using fruits, vegetables and premium seasonal produce into courses such as Charred Swordfish Belly with Foie, Red Shiso Soy and Shishito Pepper.

About Sense

Chef Michiel started his career at a stone’s throw from what is now Restaurant Sense. He opened his first restaurant, Fleur sur l’eau, with his business partner in 2008, and received his first Michelin star in 2010. After working at De pastorale  and Het Zilte where Chef Michiel was Head Chef, he travelled the world to oversee the projects of Sergio Herman and Peter Goossens. While working as a consultant for 5 years and being Head Chef at restaurant Saint Guison, the idea to create a place of his own – a place where he could put his ideas into practice – began to take shape.

Since opening Restaurant Sense in 2020, he has received his first Michelin star and a Gault & Millau score of 16/20. Chef Michiel’s aim is to keep perfecting his art, be it in the kitchen or in the front house of Restaurant Sense.

About Alma by Juan Amador

Having worked with 3-Michelin Star Chef Christian Bau of Victor’s Dining, Germany, Chef Eng Tong has always been part of the Asian team for Chef Bau’s four-hands pop-ups, most recently at Michelin-starred Noi at Four Seasons Hotel. Chef Eng Tong was the team captain who led the Singapore National Culinary Team at the 2014 Culinary Olympics to clinch the championship, and was also the Singapore representative at the Bocuse d’Or – the world’s most famous culinary competition from 2013 – 2017. At the Asia selection of Bocuse d’Or 2012 in Shanghai, he exceeded all expectations and came in first, beating other Southeast Asian countries such as Japan to achieve the top podium position.

Chef Eng Tong’s vision for Alma by Juan Amador is to apply his years of deep-diving into competition culinary techniques to the menu to bring an elevated gastronomic experience for the diner.
