Derived from the term ‘little one’ in Malaccan Creole Portuguese, Quenino by Victor Liong pays homage to the heritage and authenticity of Asian culinary traditions.
Chef Victor is best known in the Australian dining scene for his restaurant Lee Ho Fook, which currently holds Two Hats in the revered The Age Good Food Guide, which is considered the Michelin equivalent for Australia. Lee Ho Fook’s innovative approach to Chinese cuisine was also recognised in the World’s 50 Best Discovery.
The restaurant is helmed by Chef-Owner Victor Liong as well as Singaporean Chef de Cuisine, Sujatha Asokan, who was named “Rising Chef of the Year” by the World Gourmet Summit in 2019. This well-appointed dining space which is designed by an award-winning architecture firm and design studio, aims to evoke Singapore’s tropical environs.
The degustation menu-only restaurant is a celebration of Asia’s culinary diversity, playfully serving up elements from across Asia while paying homage to their roots. This September, embark on a culinary adventure with Quenino’s contemporary Asian cuisine, featuring a medley of flavours that bring to life the taste of this dynamic region.

Chef Victor epitomises modern culinary excellence, blending his diverse background into inventive and enjoyable dishes. Growing up in multicultural Sydney with Chinese heritage and being raised in Brunei by Malaysian parents, he seamlessly combines various culinary influences. His Melbourne restaurant, Lee Ho Fook, is renowned for its modern Chinese cuisine and has earned numerous accolades, including The Age Good Food Guide Two Hat Award for 2023-2024 and annual recognition in the World’s 50 Best Discovery from 2019 to 2023.
At Quenino, Chef Victor crafts refined tasting menus that honour Singapore’s diverse food culture using contemporary techniques.

Chef Sujatha, affectionately known as Chef Su, has a culinary passion deeply rooted in her multicultural upbringing with a Malaysian Chinese mother and a Singaporean Indian father. This rich blend of cultures inspired her love for cooking and creativity in the kitchen, where she enjoys fusing traditional Asian dishes with diverse spices and flavours.
Before her current role, she was Head Chef at Botanico and honed her skills at Stellar at 1-Altitude, Pollen, and Esquina. In 2019, she was named “Rising Chef of the Year” by the World Gourmet Summit, which led to a two-week stage at the renowned Mugaritz in Spain, where she further refined her contemporary cuisine skills.
